Raw Carrot Ginger Soup

I'd like to thank you all for your wonderful comments on my last post. I <3 all the vegan love :)

Yesterday I was really craving some soup, but I didn't have a lot of veggies in my fridge and remembered I saw this video, from which I got inspiration for this recipe. I know it's not the prettiest soup (read: it's the ugliest soup known to mankind. Mmm, brown soup) but seriously, it's sooo delicious. If you like carrots and ginger half as much as I do, I'd bet that you'd love this soup.

Carrot Ginger Soup


Serves 2

5-6 medium to large carrots
1 inch piece of ginger
1/2 of an avocado
cumin, to taste
pepper, to taste
sea salt, to taste
toppings: I used raw corn, home-grown sprouts and tomatoes which was deeeelish, but I bet bell peppers, red onion and some paprika would be really good on this too. Have fun with it!

Juice your carrots and ginger.* I also juiced a few pieces of kale but I doubt it would change the flavour if you didn't use it. In a blender or food processor (I used my Magic Bullet and it worked well for once!) blend together the juice, avocado, and seasonings. Pour into bowls and top with your toppings of choice.

*If you don't have a juicer, you could try blending the carrots and ginger with some water and straining it through a cheese cloth or nut milk bag. If you don't care about it being raw, then you could steam the carrots and blend them with some veggie broth instead of juicing.

  1. Mmmmmmmmm. I haven't gotten in a soup kick in a while, but the raw soup sounds yummo! ;)
    Also love your comment "ugliest soup known to mankind!" ;) That made me literally laugh out loud!
    I need to make more raw food!!! I have a plan to do that when I get back home for the rest of the summer! Raw raw raw. :) I can't wait for raw noms!!

  2. Aly, ginger + carrots totally = luuuurve. Raw food is sooo much fun, especially in the summer when you're craving cool foods, though most of the time my raw noms consist of salads and raw cookie dough, which is just soaked nuts or seeds blended with either raisins or dates, some sea salt and some vanilla. It's sooo good. Every time, I intend to roll it into balls so I can freeze them and have them last longer than five seconds flat but I always just eat it out of the Magic Bullet with a spoon. ;)

  3. Hi! Happy Sunday to you:) I love carrot-ginger soup, but never thought of adding avocado in it! Such a cool idea! And it is really not the ugliest soup, believe me - recently I made the most delish blended lentils soup, but imagine the texture and color of blended lentils...Yeah, you got it:) Noone except me ate it:( But once again - it was extremely good, so never judge a book by its cover :)
    I love raw soups - raw cucumber soup, zucchini soup, red beets soup...all are awesome.Raw buckwheat pudding doesn´t taste bad either:) And banana soft-serve or avocado cocoa cream..mmmmmmm! I am going to get myself some breakfast:))

  4. Mmmmmmmmm. I'm definitely making some of that!!! :D Ahhhhh! And I totally know the dilemma of trying to not entirely consume the food. Especially with batter/blended banana coconut butter... I even have trouble waiting to finish cooking my dinner before it's like half gone!! Self control, I tell ya! It's hard to do! ;)
    I love how our bodies change based on the seasons. Like, I'm just craving salads and veggies and fruits (raw and frozen). I love love love seasonal cravings! It just makes me happy to know that my body tells me what it wants... I half wonder if those people who consume only fast food just ignore the cravings or don't get them! It astounds me!!

  6. Aly, haha I have no self control. It's horrible, but slowly getting better.
    I love how, with the changing seasons, our tastes and cravings change, too. I feel sorry for people who don't get to experience this, or get to listen to what their body is really telling them because they fill it with crap. Don't even worry about the long comment. I'm notorious for being long-winded with my comments. Oh well :)

  9. I've never tried raw soup, but am trying to get more into raw "cooking" as of late. I happen to have carrots and love ginger...I'm lacking a juicer and an avocado, but I just might have a go at this anyway. Cold gingery soup sounds perfect for summer! Now off to read your vegan post...

  15. That soup looks delicious! Love the presentation :-) I made raw tomato and basil soup once - Phil loved it but I didn't! I also did a courgette soup that was raw....I like my soups piping hot though xx

  16. Thanks Emma :) Tomato and basil sounds good, but I agree, I prefer hot soups to cold. I think one of the reasons I liked this one was because the ginger was warming, and it wasn't chilled, but more at room temp because I let it sit out in the blender for a bit.
